Breakfast Pizza

This recipe is a family favorite of mine. Every year, since before I can remember, we have eaten this for breakfast on Christmas. We rarely have it any other time, but I decided to make it for dinner a couple weeks ago and I remembered how much I absolutely love it.
Make it... you won't regret it (unless you already have high cholesterol and a lot of plaque build up in your arteries... That's just the nurse part of me talking though....)
Ingredients:
2 packages crescent rolls

6 eggs
1/4 cup milk
1/2 tsp. salt
1/4 tsp. pepper
2 T. parmesan

1 cup hashbrowns
1 lb. sausage
1 cup cheese

Directions:
Press crescent rolls onto bottom of cookie pan and smoosh (very official term) the edges together so there are no gaps. It should almost fill a cookie sheet. Precook crust in 350 oven for 8-10 minutes. You want it mostly cooked. In the time that is cooking, mix together the eggs, Parmesan, salt, pepper and milk and completely cook.
Also cook your sausage and hashbrowns (I always put about a Tbsp of oil in the hashbrowns to help them cook). Once everything is cooked/heated through, and your crust is done precooking, layer your toppings on the crust: Eggs, hashbrowns, sausage and then the cup of cheese. Cook for 20 minutes on 350 until cheese is melted.

Seriously... doesn't that look delicious? I could probably eat this every night. It is so yummy. We eat it with a little salsa and it adds just the right kick to it. YUM!Photobucket

Grandpa Leavitt's Fudge

Alright... so speaking of lots of sweets at Christmas, I can't help but share my Grandfather's amazing fudge. I absolutely love it and have never made it by myself until this year. I am so excited!!

First, here are all the ingredients:
3 1/2 cups white sugar
1 1/3 cup evaporated milk
1 cup marg/butter ( I use the REAL THING!)
1/2 tsp salt

16 oz pkg(1 lb) marshmallows
2 pkg (12 oz size) semisweet choc chips
1 pkg milk choc chips

3 tsp vanilla
3 cups chopped walnuts/almonds(opt)

Now here are the directions: Before you start, make sure you have your tray greased and your nuts chopped (if desired) and your bags of marshmallows/chocolate chips ready to go! Put sugar, evap milk, butter and salt in a large pot and
bring to a full boil, stirring constantly, until you can't stir down. Boil 5 minutes at moderate heat, stirring almost constantly.Turn heat to low and add the marshmallows.Stir in until completely smooth and then remove from heat and add the 3 bags of chocolate chips. Honestly, at one point I was wondering if they were ever going to completely mix in... but just keep stirring! If you happen to drop a chocolate chip or marshmallow like I did, I hope you have a good automatic vacuum like I do....Stir in until completely melted, then add the nuts (if desired) and the vanilla. I personally don't like nuts in my fudge but if you like em... go right ahead. Pour onto a large buttered cookie/jelly roll tray and store in a cool place.
Fun changes: My sister made a batch of this using Andes Mints. She poured in half the fudge onto the tray, sprinkled the chopped up Andes mints, poured the rest of the fudge over the top and then let it slightly set up. Then she pressed in the rest of her Andes mints in to the top. It is so beautiful and if you like mint fudge, SO YUMMY! I just finished making the batch of plain fudge (above) but my next one will be Andes mint fudge! YUM!!

Easiest Potato Cheddar Soup

This recipe I am going to share comes from my Mother-in-Law. While we were down in Idaho, my MIL managed to have 26 people at her house for Thanksgiving without going crazy. That's quite the accomplishment if you ask me. I wasn't even in charge of the dinner and thought I might go crazy. Hats off to her! Once most people had left and it was just the immediate family at the house, she made this yummy soup for us. She got home and 25 minutes later dinner was ready. SERIOUSLY. I was absolutely amazed and the soup was so yummy! I asked her for the recipe and I have to share it with you. The only picture I have of it is the picture of the jar that we are giving away as Christmas gifts this year. I am so tired of giving/receiving plates full of cookies that nobody eats. Or that I eat and I just feel sick after... Ugh...

I thought this was a great idea to give as a Christmas gift without overloading anyone on more SWEETS!

Here are the ingredients:

2 cups potato flakes
2 cups coffee creamer
3/4 cup powdered cheese
1/2 cup imitation bacon bits
1 tsp Mrs. Dash
2 Tbsp. dried parsely
1 tsp dried minced onion
1/2 tsp. pepper

Add all ingredients to 6 cups boiling water. Mix well and let stand 5 minutes before serving. Depending on the potato flakes you use, you may have to use more water. My MIL uses the potato pearls from the church and it uses more like 8 cups water. I would start with 6 and see how its thickening up.

Here's a couple tips:
1. If you are making this as a gift, be sure to use IMITATION bacon bits so that whoever you give this to can put it on their shelf until they want to use it, instead of in their refrigerator.

2. The only thing I had a hard time finding was the powdered cheese. If you live where you have access to a WinCo, my MIL says that they sell it in bulk there. I couldn't find anywhere that sold it, so I had to order a #10 can of it off a website I found.

3. Also, if you are making this, use the wide mouthed quart jars and use a little less than 2 cups of the potato flakes and creamer. Be sure to jam your hand down in it and compress the flakes as much as possible in order to fit everything. I pushed and pushed and pushed in order to make everything fit.

I have this in my crockpot right now for a luncheon I'm going to today and I cannot wait to have it again (especially since I'm lactose intolerant.... and the coffee creamer is lactose free!!)
