1/2 cup. warm water
2 T. yeast
2 T. sugar
Add 1st 3 ingredients together and let sit 20 minutes (until the yeast has activated- The yeasty water will be bubbly)
Combine with 1 c. scalded milk
2 tsp. salt
1/3 c. salad oil (I use my vegetable oil)
1/3 c. sugar
2 eggs
4-5 cups flour
Add 1 cup flour at a time. Knead and let rise in a warm area for 1/2 hr. Roll into balls (or in my case, I put them in a mini-loaf pan) and let rise for another 1/2 hr. Bake at 375 for 10-15 minutes. Seriously yummy... Go ahead and try them- They are so delicious and so fast for rolls!
Tips: I scald my milk in the microwave and then let it set and cool. I don't add it to the yeast mixture before it has cooled off because I don't want it to "kill" my yeast.
For smaller portions: I always halve this recipe when I am just cooking for our family of three... I think it still made 8 mini loaves with a half recipe.

I love making bread. This is a great recipe. Like you, the microwave is my friend. I just started using SAF instant yeast. Pretty cook stuff, because you just add it to your dry ingredients and keep on going!
