First, here are all the ingredients:
3 1/2 cups white sugar
1 1/3 cup evaporated milk
1 cup marg/butter ( I use the REAL THING!)
1/2 tsp salt
16 oz pkg(1 lb) marshmallows
2 pkg (12 oz size) semisweet choc chips
1 pkg milk choc chips
3 tsp vanilla
3 cups chopped walnuts/almonds(opt)
Now here are the directions: Before you start, make sure you have your tray greased and your nuts chopped (if desired) and your bags of marshmallows/chocolate chips ready to go! Put sugar, evap milk, butter and salt in a large pot and bring to a full boil, stirring constantly, until you can't stir down. Boil 5 minutes at moderate heat, stirring almost constantly.Turn heat to low and add the marshmallows.Stir in until completely smooth and then remove from heat and add the 3 bags of chocolate chips. Honestly, at one point I was wondering if they were ever going to completely mix in... but just keep stirring!If you happen to drop a chocolate chip or marshmallow like I did, I hope you have a good automatic vacuum like I do....Stir in until completely melted, then add the nuts (if desired) and the vanilla. I personally don't like nuts in my fudge but if you like em... go right ahead. Pour onto a large buttered cookie/jelly roll tray and store in a cool place.
Fun changes: My sister made a batch of this using Andes Mints. She poured in half the fudge onto the tray, sprinkled the chopped up Andes mints, poured the rest of the fudge over the top and then let it slightly set up. Then she pressed in the rest of her Andes mints in to the top. It is so beautiful and if you like mint fudge, SO YUMMY! I just finished making the batch of plain fudge (above) but my next one will be Andes mint fudge! YUM!!

I've been looking for a good fudge recipe. Grandma Aston made the best fudge ever, but apparently the recipe has been lost forever. I can't find anyone who has it. I'm going to try this today.
This was very good, and it makes a ton. I want to try the mint kind, too.
